Ingredients
FROSTED COOKIE MUMMY BROWNIES
- 2 Quest Frosted Cookies
- ¾ cup almond flour
- ⅓ cup special dark unsweetened cocoa powder
- Pinch sea salt
- ¼ cup sugar free dark chocolate chips
- ½ cup + 2 tbsp butter
- ½ cup zero calorie sweetener
- 3 eggs
- 2 tsp vanilla extract
- ½ cup sugar free white chocolate chips
- 1 tsp coconut oil
- 32 candy eye balls
Method
- Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
- Place the cookies into a food processor or nutribullet and blend until fine crumbles form.
- Transfer to a mixing bowl and combine with the almond flour, cocoa powder and salt.
- In a microwave safe bowl, add the chocolate chips, butter and sweetener and microwave on high for 20 seconds.
- Stir and microwave again for 20 seconds. Stir smooth. Let cool slightly before whisking in the eggs and vanilla extract.
- Add in the dry ingredients and stir until a batter comes together.
- Transfer to the pan and spread out the batter into an even layer. Bake for 20-25 minutes. Let cool completely before cutting into 16 bars.
- Add the white chocolate chips and coconut oil in a glass bowl over a small pot of simmering water, stirring occasionally until melted.
- Transfer to a plastic zip bag and cut the corner to make a piping bag and make zig zags across the brownies, finish with candy eyes and chill untilchocolate is solid.
