Ingredients:
– 2-pound whole wild salmon filet
– Light sour cream
– Dijon mustard
– Fresh dill
– Capers
– Salt and black pepper
– Lemon

Instructions:
1. Preheat the oven to 275ºF and line a rimmed baking sheet with parchment paper.
2. In a bowl, combine the sour cream, mustard, dill, capers, caper brine, salt, and pepper. Add lemon zest and juice, and mix until the sauce is thick but drizzle-able.
3. Place the salmon, skin side down, on the prepared baking sheet and pat it dry with a paper towel. Spread a thin layer of the mustard sauce over the salmon.
4. Roast the salmon until it’s just barely cooked through, moist, and flakes easily with a fork (about 35-50 minutes, depending on the shape of the salmon).
5. Let the salmon rest for 5 minutes, then drizzle the remaining sauce over the salmon and garnish with fresh dill sprigs. Serve and enjoy!

– Roast the salmon at 135ºF for a soft, fully cooked texture.
