Ingredients
APPLE PIE ICE CREAM CUPS
- 2 Quest Apple Pie Bars
- 12 tbsp low-calorie ice cream
- ¼ Granny Smith apple, chopped
- 1 tbsp butter
- ¼ tsp cinnamon
Method
- Preheat the oven to 350°F.
- Unwrap the bars and place them side by side on parchment paper.
- Microwave for 10 seconds.
- Cover with another piece of parchment and use a rolling pin to flatten the bars.
- Use a 2” cookie cutter to create 8 rounds.
- Spray a mini tart pan or mini cupcake pan with non-stick spray.
- Press the rounds into the cavities of the pan to make “cups”.
- Bake the cups for 6-7 minutes until golden. Let them cool completely before removing.
- Add the butter to a small saucepan over medium-low heat.
- Once hot, add the apple pieces and cinnamon. Cook until the apples are tender, about 5 minutes. Set aside.
- Use a 1.5” cookie scooper to scoop ice cream into cups and top with apple pieces.
- Finish with caramel or other toppings if desired.
