No-Bake Protein Buckeyes – Fit Foodie Finds

Looking for a protein-packed sweet treat for the holidays? Say no more! Our Protein Buckeyes recipe is just what you need. Made with protein powder, honey, and rich dark chocolate chips, these festive buckeyes are a fun and delicious dessert option.

  • Peanut butter
  • Vanilla protein powder
  • Honey
  • Dark chocolate chips
  • Coconut oil

This recipe has been tested with our favorite protein powder, Garden of Life Whey, and our go-to collagen from Vital Proteins, resulting in fabulous outcomes each time.

Topping Ideas for Protein Buckeyes

You can keep them as traditional buckeye balls or get creative with toppings such as sprinkles, shredded coconut, crushed peanuts, and mini chocolate chips.

Storage Recommendations

For best results, store the buckeyes in the freezer where they can last up to three months.

Ingredients

  • Peanut butter
  • Vanilla protein powder
  • Honey
  • Dark chocolate chips
  • Coconut oil

Toppings

  • Shredded unsweetened coconut
  • Sprinkles

Instructions

  1. Combine peanut butter, vanilla, protein powder, honey, and 1.5 tablespoons of water in a medium-sized bowl until the texture resembles cookie dough.
  2. Line a baking sheet with parchment paper and roll the dough into balls using a cookie dough scoop.
  3. Freeze the balls for around 30 minutes.
  4. Melt the chocolate chips and coconut oil in a small bowl, then dip the frozen balls into the melted chocolate.
  5. Add toppings as desired, then transfer the balls back to the baking sheet and freeze to set.

Tips & Notes

If the peanut butter portion of the buckeyes is too dense, adjust the water and continue to mix until the desired texture is achieved.
