QUESTIFIED PUDDING CUPS (EARTH DAY EDITION)

Yields: 10 servings |  Serving Size: 1/2 pudding cups

Calories: 90  | Protein: 7g  | Fat: 4g | Net Carb: 10g

Total Carb: 10g   | Sugar: <1g

Ingredients

QUESTIFIED PUDDING CUPS (EARTH DAY EDITION)

Method

  1. In a bowl of a stand mixer, beat together the milk and protein powder.
  2. Add in the pudding mix and beat on low-medium speed for 5 minutes until thickened. Cover and chill.
  3. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  4. Unwrap the Quest Bars and roll them out into thin discs using a rolling pin.
  5. Cut out cactus-shaped cookies and bake until golden brown. Let cool.
  6. Melt white chocolate with coconut oil, add green food coloring, dip cactus cookies, and chill until set.
  7. Divide pudding into bowls, top with cookie crumbles, and place a cookie cactus on top. Enjoy!
