Ingredients
PINEAPPLE BBQ MEATBALLS
Meatballs:
- 1lbs ground turkey
- 1 egg
- 2 bags Quest BBQ Original Chips, crushed
- ¼ cup almond flour
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp salt and pepper
Sauce:
- 1 cup diced pineapple (canned)
- 2 tbsp sugar free syrup (Wholesome Yum Honey)
- ¼ cup coconut aminos
- 3 tbsp tomato paste
- ½ cup pineapple juice
Method
- Preheat the oven to 475º F and prepare a baking sheet with parchment paper.
- Combine all the ingredients for the meatballs in a mixing bowl using your hands.
- Form into 15 evenly sized meatballs. Bake the meatballs for 10-12 minutes and cooked through.
- Meanwhile, add the diced pineapple to a skillet over medium heat and cook for 1-2 minutes.
- Add the remaining sauce ingredients, stir and let simmer for 5-7 minutes until the sauce has thickened.
- Add the cooked meatballs and serve.
