No-Bake Protein Buckeyes – Fit Foodie Finds

Looking for a protein-packed holiday dessert? Our No-Bake Protein Buckeyes are a fun and festive treat made with protein powder, honey, and dark chocolate chips. These delicious protein buckeyes are a twist on our popular protein balls recipe and are perfect for satisfying your sweet tooth during the holiday season.

Ingredients:
– Peanut butter
– Vanilla protein powder
– Honey
– Dark chocolate chips
– Coconut oil

Instructions:
1. In a medium-sized bowl, mix together peanut butter, vanilla protein powder, honey, and water until the texture resembles cookie dough.
2. Use a cookie dough scoop to form the dough into balls and place them on a parchment-lined baking sheet. Freeze for 30 minutes.
3. Meanwhile, melt the chocolate chips and coconut oil in the microwave in 20-second increments, stirring between each increment until glossy and melted.
4. Dip the frozen balls into the melted chocolate, then add your desired toppings such as sprinkles, shredded coconut, crushed peanuts, or mini chocolate chips.
5. Place the coated balls back onto the baking sheet and freeze to speed up the drying process.
6. Store the protein buckeyes in the freezer for up to 3 months.
