My Marry Me Chicken recipe has become incredibly popular in the Skinnytaste Facebook Community Group, so I decided to turn it into a soup! The inspiration for this recipe came from the famous Tuscan Chicken Gnocchi Soup from the Skinnytaste Cookbook. After some testing, I’m thrilled with how this Chicken and Gnocchi Soup recipe turned out. It’s the ultimate comfort soup for the winter, made healthy with plenty of protein and vegetables.
Ingredients:
– Slurry: A mixture of water, flour, and half-and-half.
– Sausage: Sweet Italian chicken sausage, casings removed.
– Shallot and Garlic: Mellow and aromatic when cooked.
– Tomato Paste: Adds a savory tomato flavor.
– Chicken: Use boneless, skinless chicken breasts.
– Parmesan: Utilizing a parmesan rind and grated cheese for a creamy, nutty flavor.
– Sundried Tomatoes: Drained and chopped.
– Italian Seasoning: A dried herb blend of basil, oregano, rosemary, and others.
– Potato Gnocchi: Store-bought or homemade.
– Spinach: Chopped baby spinach for added nutrients.
– Basil: Fresh for a more intense flavor.
Instructions:
1. Create a slurry by whisking cold water, half-and-half, and flour in a small bowl.
2. Cook the sausage in a large pot or Dutch oven over medium heat.
3. Add the remaining ingredients and simmer until the vegetables are soft and the chicken shreds easily.
4. Remove the chicken, shred it, and return it to the pot.
5. Pour in the slurry and bring it back to a boil.
6. Add the gnocchi, spinach, parmesan cheese, and basil. Cook until gnocchi float to the top and soup thickens.
Variations:
– Substitute chicken sausage with turkey.
– If you don’t have a parmesan rind, it’s fine to skip it.
– Swap the shallot with red onion.
– Substitute dried basil and oregano for Italian seasoning.
