This low-carb Crustless Quiche is a light and delicious option for breakfast, brunch, or even a light dinner! Made with leftover ham or ham steak, broccoli, and cheese.

For those looking to lighten their meal or save on preparation time, this crustless quiche is a wonderful alternative. It retains all the creamy, indulgent essence of a traditional quiche while being quicker to prepare and lower in carbohydrates.

This recipe uses leftover Easter ham and no crust, with a touch of light cream for a creamier custard texture. Feel free to customize with your favorite fillings like spinach, mushrooms, or bell peppers.

Ingredients:

  • Eggs
  • Milk and half & half
  • Grated cheese (Swiss, cheddar, mozzarella, or feta)
  • Your choice of fillings
  • Salt and black pepper
  • Optional herbs and spices (nutmeg, thyme, basil)

How To Make Crustless Quiche:

  1. Preheat the oven to 350F degrees and spray a pie dish with oil.
  2. Spread broccoli in the dish and top with ham.
  3. Whisk together milk, half and half, eggs, salt, pepper, and nutmeg to make the custard.
  4. Pour custard over the broccoli and ham, and top with cheese.
  5. Bake for 35-40 minutes until set. Slice and serve.

  • Swap ham for bacon, sausage, or vegan sausage.
