**Thai Fried Rice Recipe**
Thai fried rice is a delicious dish made with jasmine rice, fish sauce, soy sauce, and chili peppers. You can customize it with your favorite protein like chicken, shrimp, or tofu.
**Ingredients**
– 8 ounces chicken breast, shrimp, beef, pork, or tofu, cut into bite-sized pieces
– Kosher salt and black pepper, to taste
– 4 teaspoons vegetable oil, divided
– 3 cups cooked jasmine rice
– 1/2 large onion, chopped
– 3 cloves garlic, minced
– 2 scallions, chopped, plus more for garnish
– 1 large egg, beaten
– 3 large egg whites, beaten
– 2 medium tomatoes, sliced into wedges
– 2 to 3 Thai chili peppers, optional for heat
– 4 teaspoons soy sauce
– 2 teaspoons fish sauce
**Instructions**
1. Heat a large nonstick wok over high heat.
2. Season the chicken with salt and pepper, then cook in the wok until browned and cooked through. Set aside.
3. Cook the eggs in the wok, scramble, and set aside.
4. Add remaining oil to the wok and sauté onion, scallions, and garlic. Add chili peppers and tomatoes.
5. Stir in the rice, soy sauce, and fish sauce. Cook for 2-3 minutes.
6. Return the eggs and chicken to the wok. Adjust seasoning as needed.
7. Serve garnished with scallions.
**Variations**
– Add cilantro or other fresh herbs at the end.
