This phenomenal Sweet Corn Risotto recipe is a luxurious blend of sweet corn, arborio rice, flavorful Italian pork sausage, and gooey cheese. The perfect dish for a cozy night in with loved ones, this creamy risotto is made entirely in a Dutch oven, making it incredibly easy to prepare at home.

To start, add broth to a large pot and bring to a boil, then simmer. In a Dutch oven, cook the pork and brown the corn before adding the onion, garlic, and arborio rice. Simmer and reduce with broth until the rice is almost cooked, then stir in gouda and parmesan cheese until melted. Finally, fold in the pork and corn, and top with black pepper and fresh parsley for a truly comforting meal.

For a variation, try using different types of cheese such as mozzarella or cheddar. Feel free to skip browning the corn if time is limited or if you prefer the corn raw. This risotto can be made ahead of time and reheated with extra broth to maintain its creamy texture. It can also be frozen for up to 2-3 months.
