Ingredients

SOUR CREAM & ONION LATKES

Method

  1. Preheat the oven to 425 F and prepare a large baking sheet with oil, then place it into the oven.
  2. Grate the potatoes and onion using a box grater.
  3. Wring out excess water from the shredded potatoes and onion with a clean dish towel.
  4. Combine drained potatoes and onion with egg, crushed chips, salt, and pepper in a mixing bowl.
  5. Form 12 mounds on the prepared baking sheet using an ice cream scoop, then flatten with a spatula.
  6. Bake for 13-15 minutes, flip, and bake for an additional 5 minutes.
  7. Serve with sour cream and chopped green onion if desired.
