Ancient varieties of wheat, such as kamut, are being tested for their anti-inflammatory, blood sugar, and cholesterol controlling properties. The impact of nutrition on health is significant, with diet being a leading cause of death worldwide. Research shows that consuming less salt, more nuts, non-starchy vegetables, fruits, and whole grains can improve our diets. Ancient grains like kamut and einkorn wheat have higher levels of beneficial nutrients such as carotenoid pigments and antioxidants compared to modern wheat varieties. Studies suggest that ancient grains may help suppress inflammation and improve conditions like irritable bowel syndrome, nonalcoholic fatty liver disease, diabetes, and heart disease. While more research is needed, current evidence supports the health benefits of ancient grains over modern wheat varieties. It is important to include whole grains in our diets for overall health and well-being.
