This Baked Bursting Tomato Boursin Pasta is a delicious and easy meal that requires only a few simple ingredients. Instead of cooking the sauce on the stove, we roast fresh cherry tomatoes, onions, garlic, and creamy Boursin cheese in the oven for a rich and flavorful sauce. Tossed with al dente pasta, this dinner is sure to be a hit!

With two young kids, I need quick and simple recipes for weeknight dinners. This Boursin pasta recipe has been a lifesaver for busy nights when I want something tasty without spending hours in the kitchen. Plus, this baked version is just as easy and delicious as the one-pot meal.

  • Olive oil
  • Tomato paste
  • White onion
  • Cherry tomatoes
  • Fresh garlic
  • Boursin cheese
  • Fusilli pasta

To try: Roasted Garlic Baked Boursin Dip

Leftover baked Boursin pasta can be stored in the refrigerator for up to 3 days. Reheat in the microwave or oven with a splash of water or broth to prevent drying out.

Instructions:

  1. Preheat oven to 400ºF.
  2. Add olive oil and tomato paste to an 8×8-inch baking dish and whisk together.
  3. Add garlic, onion, tomatoes, and Boursin cheese to the dish and bake for 25-30 minutes.
  4. Cook pasta until al dente, then reserve some pasta water.
  5. Mash garlic and tomatoes, then toss with cooked pasta and pasta water until creamy.
  6. Drizzle with olive oil and garnish with chives and red pepper flakes.
