These flavorful Mexican stuffed peppers feature a delicious filling of ground chicken and pork, black beans, corn, rice, taco seasoning, and salsa. Perfect for an easy weeknight meal, these peppers can also be frozen for later enjoyment. Whether you’re a stuffed pepper aficionado or new to the game, you’ll love this protein and veggie-packed dish. To make them, simply cook the meat mixture, stuff the peppers, bake, and enjoy! Customize with your favorite salsa and cheese blend. For a spicy kick, add jalapeños or hot sauce. Freeze leftovers individually wrapped in foil or store in the fridge.
