Ingredients & Substitutes
These are the main ingredients and substitutions for these blueberry cheesecake bars:
- Homemade shortbread cookies for the crust
- Unsalted melted butter
- Cream cheese at room temperature
- White sugar
- Whole wheat flour
- Eggs
- Lemon zest and vanilla extract
- Fresh blueberries (not frozen)
How to Make
- Preheat oven to 325 degrees Fahrenheit.
- Combine the cookie crumbs and melted butter in a bowl until it resembles wet sand.
- Line a 9 inch square pan with parchment paper and press the cookie crumbs into the pan.
- In a stand mixer, beat room temperature cream cheese until creamy. Add in flour, sugar, lemon zest, and vanilla; beat until combined.
- Add eggs and beat until just combined.
- Fold in blueberries.
- Transfer batter to the pan and sprinkle a few blueberries on top.
- Bake for 35 to 38 minutes or until the middle is set but still a little jiggly.
- Remove from oven, cool in the pan for 1 hour, then refrigerate for at least 2 hours.
- Slice and enjoy!
