Grilled Eggplant with Feta – Skinnytaste

The flavors of oregano really shine through, and it pairs perfectly with anything you’re grilling. Plus, it’s easy to make and can be ready in under 30 minutes!

Ingredients:
– Eggplant
– Red wine vinegar
– Extra-virgin olive oil
– Oregano
– Garlic
– Kosher salt
– Feta cheese

Instructions:
1. Preheat the grill to high.
2. Cut the eggplant into slices and season with salt.
3. Whisk together the vinegar, olive oil, oregano, garlic, and salt.
4. Grill the eggplant for 5 minutes, then flip and top with the garlic-herb mixture and feta.
5. Cover and grill until the cheese is melted and eggplant is tender.
6. Serve hot or warm.
