30-Minute Bruschetta Pasta with Burrata

This tangy and fresh pasta dish is full of ripe tomatoes, aromatic basil, and balsamic vinegar, then topped with creamy burrata. It’s a delicious meal that the whole family will love.

Typically, bruschetta refers to an appetizer of toasted bread with fresh tomatoes, but we’ve turned it into a yummy pasta dish. Feel free to use the first half of the recipe to make traditional bruschetta instead or try it with Grilled Bruschetta Chicken!

Despite its many components, this dish only takes 30 minutes to make. Perfect for busy weeknights when you don’t feel like cooking. Just prep your tomato mixture, cook the pasta, and bring them together for a comforting meal.

Ingredients:

  • Cherry Tomatoes
  • White Onion
  • Basil Leaves
  • Balsamic Vinegar
  • Fresh Lemon Juice
  • Fettuccine pasta
  • Burrata
  • Balsamic Glaze

Instructions:

  1. Make Tomato Mixture: Combine cherry tomatoes, onions, olive oil, balsamic vinegar, lemon juice, salt, and basil in a bowl. Set aside.
  2. Cook Pasta: Boil salted water, add pasta and cook until al dente.
  3. Flavor Pasta: Toss pasta with olive oil, balsamic vinegar, and pasta water. Heat until glossy.
  4. Assemble: Transfer pasta to a platter, top with tomato mixture and burrata.
  5. Garnish, Serve: Garnish with basil, pepper, red pepper flakes, and sea salt. Enjoy!

Tip: Always reserve a little pasta water when making pasta for a creamier sauce.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water or olive oil.

How To Serve: This pasta is a mix of warm and cold elements. Serve with grilled chicken and a Caesar salad for a complete meal.
