
Last September, I moved from a house in the suburbs to an apartment in the city, leading to some adjustments. One major change is how I eat in the summer.
Previously, I enjoyed dinner outside every night during the warmer months, but now with an apartment, things are a bit different. While I miss those patio dining experiences, I’ve found a new routine. Our apartment building has a lovely roof deck where we enjoy cocktails and coffee with a stunning view. For dinner, I’ve come up with a simple solution – my Grand Green Goddess Platter. Essentially a crudité platter with refreshing veggies, eggs, and shrimp, perfect for summer evenings outside.

Choose your favorite vegetables and dipping options, based on what you have in the fridge:
Asparagus, Green beans, Broccoli, Cucumber, Carrots, Radishes, Small red potatoes, Endive or gem lettuce leaves, Shrimp, Hard-boiled eggs, Baguette or crusty bread, Bread sticks
Step 1: Prep Your Vegetables and Dipping Things
Prepare your vegetables as desired and arrange them on a serving platter or board.
Step 2: Make Your Green Goddess Dip
Blend all the dip ingredients in a food processor until smooth.
