This Lemon Blueberry Bread is a Perfect Treat!

This lemon blueberry bread is bright, fresh, flavorful, and so fun! Fresh blueberries and lemon zest bake together into a tender, moist loaf. With a crumb that practically melts in your mouth, it is the perfect breakfast, afternoon snack, or dessert!

Ingredients:

  • Fresh blueberries
  • Lemon zest
  • Granulated sugar
  • White whole wheat flour
  • Baking soda
  • Sea salt
  • Unsalted butter
  • Eggs
  • Milk

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit and line a bread loaf pan with parchment paper.
  2. In a bowl, combine lemon zest, sugar, flour, baking soda, and salt.
  3. Using a hand mixer, add softened butter and mix until crumbly.
  4. Add eggs, lemon juice, and milk; stir to combine.
  5. Toss blueberries in flour, then fold into batter.
  6. Transfer batter to pan and bake for 55-60 minutes.
  7. Once cool, make the frosting by combining vanilla frosting and blueberry jam.
  8. Frost, slice, and serve!
