This post may contain affiliate links. Read my disclosure policy. Cream of asparagus soup is one of my favorite comfort foods. This recipe is incredibly easy to make with just 5 ingredients (not including salt and pepper) and can be ready in under 25 minutes!
Ingredients:
– Asparagus spears (with woody ends snapped off)
– Unsalted butter or olive oil
– Onion
– Chicken broth
– Low-fat sour cream or full fat Greek yogurt
– Kosher salt and fresh pepper
Instructions:
1. Melt butter in a large saucepan and sauté onion until soft.
2. Cut asparagus stalks in half and add to the pot with chicken broth and black pepper.
3. Bring to a boil, cover, and cook for about 20 minutes until asparagus is tender.
4. Remove from heat, add sour cream, and puree until smooth using a hand-held blender.
Variations:
– Add fresh herbs like chives or thyme
– Add a squeeze of lemon juice or parmesan cheese for different flavors
Ways to Make Creamed Soups Without the Cream:
– Puree the veggies after cooking
– Add a potato for extra thickness
– Make a roux or slurry
– Use sour cream or yogurt for a creamy flavor
Storage:
– Refrigerate for up to 4 days
– Freeze for up to 3 months
