30-Minute Bruschetta Pasta with Burrata

Typically, bruschetta refers to an appetizer of toasted bread with fresh tomatoes, but we’ve turned it into a yummy pasta dish. Feel free to use the first half of the recipe to make traditional bruschetta instead or try it with Grilled Bruschetta Chicken!
Despite its many components, this dish only takes 30 minutes to make. Perfect for busy weeknights when you don’t feel like cooking. Just prep your tomato mixture, cook the pasta, and bring them together for a comforting meal.
Ingredients:
- Cherry Tomatoes
- White Onion
- Basil Leaves
- Balsamic Vinegar
- Fresh Lemon Juice
- Fettuccine pasta
- Burrata
- Balsamic Glaze
Instructions:
- Make Tomato Mixture: Combine cherry tomatoes, onions, olive oil, balsamic vinegar, lemon juice, salt, and basil in a bowl. Set aside.
- Cook Pasta: Boil salted water, add pasta and cook until al dente.
- Flavor Pasta: Toss pasta with olive oil, balsamic vinegar, and pasta water. Heat until glossy.
- Assemble: Transfer pasta to a platter, top with tomato mixture and burrata.
- Garnish, Serve: Garnish with basil, pepper, red pepper flakes, and sea salt. Enjoy!
Tip: Always reserve a little pasta water when making pasta for a creamier sauce.
